How would you describe your food philosophy, and what drew you to N25 as your caviar of choice?


“My style of cuisine reflects authenticity, originality, and creative freedom. These qualities are essential to our work and embody our philosophy: Be Different.

As a 3-Michelin-star chef, what is the most important factor when selecting your produce?


“As a chef working at the three-star level, I know that extraordinary dishes begin with extraordinary ingredients. To craft something meaningful and unforgettable, the product must lead the way. N25 provides that standard of excellence, and we’re thrilled to incorporate their caviar into our new offerings.”


How does the ageing of N25 caviar shape your dishes, and which of its characteristics align most closely with your philosophy in the kitchen?


“Aging is fundamental to caviar; it reveals the subtle umami and nutty nuances that develop only through time. When we create a new composition, we always consider these layers, because achieving harmony among flavors is the essence of haute cuisine.
The defining characteristic of N25, for me, is the remarkable texture and clean, refined pop of the eggs—truly unlike anything I’ve tasted. It brings an elegant, focused burst of flavor, making it texturally one of the most impressive caviars I’ve worked with.” 


How do you ensure caviar’s delicate nuances remain at the forefront of a dish?

“We take great care to let the caviar take center stage. Its refined nuances create moments our guests remember long after the experience.”
