N25 - our name and origin

N25, our name, stands for the extraordinary origin that makes our product truly unique. Located at 25° north latitude in the mountains at over 2200 meters altitude, our aquaculture facility sits in a hidden gem of natural beauty. It provides us with the cleanest air, purest spring water, and the optimal climate to raise the sturgeons that give birth to our caviar.

"Umami" Experience - aging process

One of the most defining factors in achieving the complex flavor profile is our unique aging process. During aging, as fermentation takes place and proteins break down to amino-acids, caviar gradually develops complex and rich flavors.

Because of our extraordinarily old sturgeons, they produce high quality roes that allow us to age them for an extended period of 3 to 10 months. At the end of the aging period, the membrane of the caviar becomes more translucent while retaining elasticity. This unique aging process gives N25 Caviar nutty and floral tastes on the palate with the right balance of saltiness, creaminess, and sea flavor, an umami experience with every spoon

Quality Standard

The selection process of our sturgeons begins before harvest. Once the females are determined to be mature, they are selected based on the size and color of the roe. After harvest, we select once again, but focusing on the aging potential of the caviar and complexity of flavor. Only ~20% of harvested caviar will make the quality of N25 caviar.

The selected caviar is then matured in our specialized cold room in Germany where we closely inspect each batch to determine the optimal point of packing. This is where the transformation begins and we are able to select for individual preferences and tastes.

All the processing and packing takes place in a HACCP certified facility to ensure the highest hygiene and safety standards are met. Each tin of caviar will contain the vital CITES information on the back, indicating the batch number and species.

All orders made before 3pm weekday will arrive the next day. For Saturday delivery, please note in the order. All shipments will be carried out by GO Express or UPS. The caviar is packed in a styrofoam box with cooling packs to ensure a perfect condition upon arrival.
